- 1 onion, chopped
- 1 bell pepper (any color), diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (15 oz) diced tomatoes
- 1 packet (1.25 oz) taco seasoning mix
- 1 packet (1 oz) ranch seasoning mix
- 4 cups beef or vegetable broth
- 1 cup sour cream (for serving)
- Shredded cheddar cheese (for serving)
- Fresh cilantro, chopped (for garnish, optional)
- Tortilla chips (for serving)
Instructions:
Brown the Meat:
- In a large skillet, brown the ground beef or ground turkey over medium-high heat. Break it into crumbles as it cooks. Once fully browned, drain any excess fat.
Combine Ingredients in the Slow Cooker: 2. In your Crock-Pot, combine the cooked and drained meat with chopped onion, diced bell pepper, black beans, kidney beans, corn, diced tomatoes with green chilies, diced tomatoes, taco seasoning mix, ranch seasoning mix, and beef or vegetable broth.
- Stir everything together until it’s well combined.
Slow Cook: 4. Cover your slow cooker and cook the mixture on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the more the flavors will meld together.
Serve: 5. Ladle the Crock-Pot Taco Soup into bowls.
- Top each serving with a dollop of sour cream and a sprinkle of shredded cheddar cheese.
- Garnish with fresh chopped cilantro if desired.
- Serve the soup with tortilla chips on the side for a satisfying crunch.
Cook’s Notes:
- For a vegetarian version, you can omit the ground meat and use vegetable broth.
- Adjust the level of spiciness by choosing mild, medium, or hot taco seasoning and diced tomatoes with green chilies.
- This soup is highly customizable. Add your favorite toppings like diced avocado, sliced jalapeños, or a squeeze of lime for extra flair.
- Leftovers can be refrigerated and reheated for another delicious meal.
