I learned this recipe at a restaurant, and it’s easily the tastiest chicken I’ve ever eaten. Follow along to create this delicious and juicy chicken dish, paired perfectly with seasoned potatoes.

Ingredients:

  • 1 whole chicken
  • Salt to taste
  • Black pepper to taste
  • 1 stick of butter
  • 12 garlic cloves
  • 1 tablespoon butter (for sautéing)
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons mustard
  • 2 tablespoons honey
  • 1 teaspoon sweet paprika
  • 1/4 cup white vinegar
  • 500 grams of peeled potatoes
  • Water (for boiling potatoes)
  • Olive oil (for sautéing)
  • 2 onions, cut into strips
  • 1 red bell pepper, cut into strips
  • Parsley to taste
  • Parchment paper
  • Aluminum foil

Instructions:

  1. Prepare the Chicken:
    • Start by cutting a whole chicken in half. This ensures even cooking and better seasoning coverage.
    • Season both sides of the chicken halves with salt and black pepper to taste. Make sure to spread the seasoning evenly over the chicken.
    • Take a stick of butter and poke several holes in it with a fork. Then, mash the butter onto the chicken and spread it using a brush. Repeat this process for the other side of the chicken.
  2. Sauté the Garlic:
    • In a saucepan, add 1 tablespoon of butter and melt it over medium heat.
    • Add 12 garlic cloves to the melted butter and sauté until they turn golden brown. Set the garlic aside.
  3. Fry the Chicken:
    • In the same pan where you sautéed the garlic, add the prepared chicken halves and fry for 5 minutes on each side until they are golden brown.
  4. Prepare the Sauce:
    • In a bowl, mix together 1/4 cup of soy sauce, 2 tablespoons of ketchup, 2 tablespoons of mustard, 2 tablespoons of honey, 1 teaspoon of sweet paprika, and 1/4 cup of white vinegar. Stir well to combine.
    • Brush this sauce all over the chicken halves to coat them evenly.
  5. Bake the Chicken:
    • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
    • Place the chicken halves on a baking sheet lined with parchment paper. Cover the chicken with aluminum foil to keep it moist during baking.
    • Bake in the preheated oven for 40 minutes.
  6. Cook the Potatoes:
    • While the chicken is baking, prepare the potatoes. In a saucepan, add 500 grams of peeled potatoes and enough water to cover them. Boil for 20 minutes or until tender.
    • Drain the potatoes and set them aside.
  7. Sauté the Vegetables:
    • In a pan, heat a drizzle of olive oil over medium heat.
    • Add 2 onions cut into strips and 1 red bell pepper cut into strips. Sauté until the onion becomes translucent.
    • Add the boiled potatoes to the pan and season with salt, black pepper, and parsley to taste.
    • Sprinkle 1 teaspoon of sweet paprika over the mixture and stir well to combine all the flavors.
  8. Serve the Chicken and Potatoes:
    • Once the chicken is done baking, remove it from the oven and let it rest for a few minutes.
    • Serve the chicken with the seasoned potatoes on the side. Garnish with extra parsley if desired.
    • Look how pretty it looks! The chicken is perfectly cooked, juicy, and packed with flavor, while the potatoes are seasoned to perfection.

Tips and Variations:

  • Herbs: Feel free to add fresh herbs like rosemary or thyme to the chicken for extra flavor.
  • Spices: Adjust the spices according to your taste. You can add chili flakes for a spicy kick or additional herbs for more depth.
  • Vegetables: Add more vegetables like carrots or zucchini to the potato mix for a more varied side dish.
