Easy Cajun Lasagna

For the Cajun Meat Sauce:

  • 1 pound ground beef or ground turkey
  • 1 pound andouille sausage, diced (or any spicy sausage of your choice)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

For the Cheese Sauce:

  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1 teaspoon Cajun seasoning

Additional Ingredients:

  • 9 lasagna noodles, cooked and drained
  • Chopped fresh parsley for garnish (optional)


  1. Prepare the Cajun Meat Sauce:
    • In a large skillet, cook the ground meat and diced sausage over medium heat until browned and cooked through, breaking it up into crumbles with a spoon. Drain any excess grease.
    • Add the diced onion, bell pepper, and celery to the skillet. Cook for about 5 minutes until the vegetables are tender.
    • Stir in the minced garlic, Cajun seasoning, dried thyme, crushed tomatoes, diced tomatoes, salt, and black pepper. Simmer the sauce for 10-15 minutes, allowing the flavors to meld. Taste and adjust the seasoning as needed.
  2. Prepare the Cheese Sauce:
    • In a separate saucepan over low heat, combine the shredded cheddar cheese, grated Parmesan cheese, sour cream, mayonnaise, milk, and Cajun seasoning. Stir continuously until the cheeses are fully melted and the sauce is smooth. Remove from heat.
  3. Assemble the Lasagna:
    • Preheat your oven to 350°F (175°C).
    • In a 9×13-inch baking dish, spread a small amount of the Cajun meat sauce to coat the bottom.
    • Place 3 lasagna noodles on top of the meat sauce.
    • Add a layer of the Cajun meat sauce over the noodles.
    • Pour a portion of the cheese sauce over the meat sauce.
    • Repeat the layers until you’ve used all the noodles and sauces. Ensure the top layer is cheese sauce.
  4. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the lasagna is hot and bubbly.
  5. Serve:
    • Allow the Cajun lasagna to cool for a few minutes before slicing.
    • Garnish with chopped fresh parsley if desired.
