The World’s Easiest and Most Delicious Raspberry Jam Oat Bars Recipe


These raspberry jam oat bars are the world’s easiest and most delicious recipe. They take less than 10 minutes to make, require no baking, and are full of healthy ingredients like oats and coconut oil. The jam is made from raspberries and dates–two superfoods that are full of antioxidants!
What makes these bars so easy? First, there’s no need for any equipment beyond an oven or microwave (or even just a stovetop). Second, all you have to do is mix together some ingredients in a bowl with your hands before spreading them out on parchment paper-lined baking sheets–no measuring cups needed! Last but not least: they come together without any fussing around with rolling pins or other tools because everything gets pressed into place using just two spatulas (one flat; one rounded).


You’ll need:

  • All-purpose flour
  • Rolled oats
  • Granulated sugar
  • Baking powder
  • Salt
  • Unsalted butter, softened (1/2 cup) Honey (1/4 cup) Vanilla extract (1 teaspoon) Raspberry jam (1/2 cup)


  1. Preheat your oven to 350 degrees F, and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the dry ingredients (oat flour, coconut sugar, baking powder and salt).
  3. In another bowl whisk together the wet ingredients (eggs, non-dairy milk of choice and vanilla extract). Add this mixture into your dry ingredients along with raspberries and stir until combined well but don’t over-stir or you’ll end up with tough bars!
  4. Press 2/3 of this mixture into prepared pan then spread jam evenly over top of that layer before sprinkling remaining oat mixture on top as evenly as possible without disturbing anything else too much (you want those berries!). Bake for 20 minutes or until golden brown around edges and firm in middle when pressed gently with finger tips – check after 18 minutes just in case though! Cool completely before cutting into squares because hot jam burns fingers!

Tips and Tricks

  • Use fresh or frozen raspberries. They’re both fine!
  • If you want to use another jam, go ahead! Try strawberry, blueberry or apricot preserves.
  • You can add nuts or dried fruits like cranberries or raisins if you’d like more texture and flavor in your oat bars.
  • The baking time will depend on how thick your raspberry jam is (and whether it’s homemade). If yours is very thick and spreads out into a thin layer when you spread it over the oats–like store-bought raspberry preserves tend to do–then bake for 15 minutes at 350 degrees F., then reduce heat down to 300 degrees F., remove from oven after another 5-10 minutes until just golden brown around edges but not burnt looking at all (they’ll still be soft). The center may seem undercooked but trust me–it will set up perfectly once cooled completely so don’t overcook these guys! Otherwise: if using homemade jam which tends not be as thick as store bought ones then just bake them at 350 degrees F., remove after 20 minutes total baking time when they look golden brown around edges; let cool completely before cutting into squares.”
