Ingredients

  • 1/2 cup Dried cherries
  • 1/2 cup Dates, pitted and chopped

  • 2 Eggs

Baking & Spices:

  • 1 3/4 cups All-purpose flour
  • 1/4 tsp Ground allspice
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/4 tsp Ground cinnamon
  • 1 Cinnamon stick
  • 1 tbsp Confectioners’ sugar
  • 1/4 tsp Ground nutmeg
  • 1 1/2 tsp Salt
  • 1/2 cup White sugar

Oils & Vinegars:

  • Baking spray

Nuts & Seeds:

  • 3/4 cup Unsalted mixed nuts

Drinks:

  • 1 cup Orange juice

Dairy:

  • 3/4 cup Unsalted butter

Desserts:

  • 1/4 cup Crystallized ginger, chopped

Beer, Wine & Liquor:

  • 5/8 cup Spiced rum

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare a 9×5 inch loaf pan by greasing it with baking spray and lining it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a small saucepan, combine the dried blueberries, dried cherries, chopped dates, chopped dried apricots, golden raisins, zest and juice of the lemon and orange, and chai tea. Bring to a simmer over medium heat, then remove from heat and let it cool for 10 minutes.
  3. In a large mixing bowl, whisk together the all-purpose flour, ground allspice, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. In a separate bowl, beat the eggs and white sugar together until pale and fluffy.
