A Mediterranean-inspired salad combining white beans, fresh vegetables, and a tangy dressing, perfect as a side dish or a protein-packed meal.
Ingredients

2 cups of canned white beans, drained and rinsed
1 cup of cherry tomatoes, halved
1 cucumber, diced
1 red onion, finely chopped
1/4 cup of black olives, sliced
1/4 cup of crumbled feta cheese (optional for a vegan white bean salad)
1/4 cup of fresh parsley, chopped
2 tablespoons of fresh basil, chopped
Salt and pepper to taste
3 tablespoons of olive oil
2 tablespoons of lemon juice
1 clove of garlic, minced
1 teaspoon of Dijon mustard
Instructions
Prepare the Ingredients: Start by preparing all your fresh vegetables. Halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and slice the olives.
Mix the Salad: In a large bowl, combine the drained white beans, cherry tomatoes, cucumber, red onion, and olives. Add feta cheese if desired.
Make the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, and Dijon mustard. Add salt and pepper to taste.
Combine & Toss: Pour the dressing over the salad ingredients and gently toss until all components are evenly coated.
Add Herbs: Just before serving, sprinkle the chopped parsley and basil over the salad.
Chill & Serve: Let the salad chill in the refrigerator for at least 30 minutes before serving.
