A delightful no-bake dessert that combines the tartness of fresh blueberries with the smoothness of cream cheese, perfect for warm days.

2 cups of fresh blueberries (plus extra for garnish)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
Additional blueberries
Mint leaves
Grated lemon zest
Instructions
In a small saucepan, combine 2 cups of blueberries, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest. Cook over medium heat, stirring occasionally, until the blueberries begin to break down and the mixture thickens, about 10 minutes. Remove from heat and let it cool completely.
In a large mixing bowl, beat 8 ounces of softened cream cheese with 1 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth and creamy. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
In individual serving glasses or a large serving dish, layer the blueberry mixture and the cream cheese mixture, starting with the cream layer. Repeat until all ingredients are used, finishing with a cream layer on top.
Refrigerate the assembled dessert for at least 2 hours to allow it to set and the flavors to meld beautifully.
Just before serving, top with additional blueberries, a sprinkle of lemon zest, and a few mint leaves for a burst of freshness.
