Step 1: Preheat oven to 350°F. Grease two round cake pans.
Step 2: In a large bowl, mix together flour, baking powder, and salt.
Step 3: Into the bowl with the flour mixture, pour the shortening and butter. Use electric beaters to blend until the mixture is well-combined.
Step 4: Add one egg and some vanilla extract to the mixture and blend again. The next step is optional but recommended – add in some almond extract if you like your cake tasting like an almond joy! Move on to mixing in all of your dry ingredients into the batter by hand.
Step 5: Pour in half of your dry ingredients then add in half of your buttermilk. Mix until blended. Then pour in the rest of your dry ingredients and mix again.
Step 6: Beat the egg whites until they form stiff peaks, then slowly add a couple tablespoons of sugar while beating.
Step 7: Next, fold one-third of your egg whites into the batter with a rubber spatula or wooden spoon being careful to not overmix it with your electric beaters or stirring utensil (stirring too much will make air bubbles which ruin the cake). Repeat this step twice more, folding in two-thirds of each batch’s egg.
