Instructions
Step 1: Prepare the Vegetables
- Chop the Cabbage:
- Start by cutting up half a cabbage into medium-sized pieces. This provides a great base for the roasted vegetable mix.
- Cut the Carrots:
- Cut half a carrot lengthways into strips. Carrots add a sweet crunch to the dish.
- Slice the Onion:
- Grab an onion, cut it in half, and then slice it thinly. Onions caramelize beautifully when roasted, adding a rich flavor.
- Prepare the Bell Peppers:
- Cut half of a yellow bell pepper, red bell pepper, and green bell pepper into strips, and then dice them. The bell peppers add vibrant colors and a sweet, tangy taste.
- Cut the Apples:
- Cut two apples into medium pieces. Apples add a unique sweetness that complements the other vegetables.
- Chop the Potatoes:
- Cut two potatoes lengthways and then into medium-sized chunks. Potatoes provide a hearty texture to the mix.
Step 2: Combine Ingredients
- Bag the Ingredients:
- Place the potatoes, cabbage, carrots, yellow bell pepper, red bell pepper, green bell pepper, apples, and onion into a large plastic roasting bag.
- Add Seasonings:
- Drizzle olive oil over the vegetables. Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of thyme to the bag.
- Mix Well:
- Seal the bag and shake it well to ensure all the ingredients are evenly coated with the seasonings and oil.
Step 3: Roast the Vegetables
- Preheat the Oven:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Roast in the Oven:
- Place the sealed bag on a baking tray and bake in the preheated oven for 40 minutes.
Step 4: Finish and Serve
- Carefully Open the Bag:
- After 40 minutes, remove the baking tray from the oven. Carefully cut the bag open with scissors, being cautious of the hot steam.
- Transfer to Baking Pan:
- Pour all the roasted vegetables into a baking pan. This allows you to serve the dish more easily and ensures any excess steam escapes.
- Final Touches:
- You can add an extra drizzle of olive oil or a sprinkle of fresh herbs if desired.
And there you have it! A delicious, quick, and healthy roasted vegetable dish that’s sure to become a favorite in your household. The combination of vegetables with apples and the perfect blend of seasonings creates a flavorful and satisfying dish.
